Cauliflower pizza crust, a healthful alternative

Cauliflower pizza crust is a great low carb option and delicious healthy alternative to heavy pizza dough.

Ingredients:

• Nonstick spray

• 2 1/2 cups cauliflower, grated

• 1 large egg, lightly beaten

• 1 cup shredded part-skim mozzarella cheese

• 2 tablespoons grated parmesan cheese

• Sea salt and freshly ground black pepper (dash of each to taste)

• Favorite pizza toppings

Directions:

Line a rimmed baking sheet with parchment paper, and preheat oven to 375 degrees F.

Grate the cauliflower using a food processor or cheese grater until you have two cups of cauliflower crumbles. Place in a large bowl and microwave for 7-8 minutes, or until soft. Let cool.

Wrap cauliflower crumbles in a clean dish towel squeeze out excess moisture. Repeat this a few times for best results and a firmer crust.

Mix in the egg, mozzarella, parmesan cheese, salt and pepper. Combined with cauliflower. Spray parchment paper with cooking spray and pat dough into a crust. Spray the top lightly with nonstick spray and bake for 10 to 15 minutes, or until golden brown.

Add your favorite toppings and bake the pizza for another 8-10 minutes.
