The Backroom offers to-go in the Snowshed parking lot

KILLINGTON— Pre-Covid, The Backroom was a “dinner party style” venue in Pittsfield, an intimate experience created by Chef Kevin Lasko and his wife Katie Stiles. However, in today’s socially-distant climate, the space became unsafe for guests. So for this winter, the couple pivoted, moving operations into a truck and offering a to-go menu.

“When we closed our doors in March, we had no idea—and couldn’t really believe—that we wouldn’t be opening them for the 2020/2021 winter season. But here we are nine months later, keeping those doors locked for the safety of our family, friends,  employees, guests and members of the larger community,” the owners wrote in a news release.

It is one of the food trucks skiers and snowboarders will find in the parking lots of Killington this season, along with Sustainable Eats and the Rollin’ Rooster (see feature.)

The Backroom to-go menu changes weekly, featuring seasonal food in a la carte options. They will be parked in the Snowshed lot Friday, Saturday and Sunday from 1 p.m.-5 p.m. No parking pass is required to access the location, so non-skiers can also enjoy the offerings.

“It’s been a scary nine months for all of us, and it’s hard to put into words how much we’ve appreciated your catering orders, your support of the Saturday Night Suppers and Thanksgiving To Go and just reaching out to check in,” the owners wrote.
